Roasted Chicken thigh dinner (video)

I’m excited for this, my second video, put together with the help of my friends CJ Richter, Jackie Gonzalez and Eric whose last name I forget. Jon Sandler plays the part of my wonderful student. This is simple food that anyone can make and is a great alternative to take out and Frozen dinners. note that it may take a few minutes for the video to load depending on your connection.

The whole cooking time is about 20-25minutes. With prep and clean up this is a 30-40 minute meal. Take that Rachael Ray.

If you use white rice you can start it after you put the chicken in the pan. for brown rice you want to start ahead of time.

Preheat the oven to 425 degrees

THE INGREDIENTS:

– Bone-in skin-on Chicken thighs (2 per person)

– Rice (1/2 cup dry per person.)

– Broccoli (about a handful per person.)

– Vermouth, wine or stock (to deglaze the pan)

– Some minced shallot or onion

– Thyme or a fresh herb of your choice

– Lemon

– olive oil

– salt

-butter (if you like)

– pepper (if you like)

The broccoli is steamed stovetop using a steam basket.
