Raw Zucchini & Basil salad

This is a simple recipe for a really delicious summer salad. For it you will need:

–       A few fresh baby Zucchini

–       Fresh basil

–       Olive oil

–       Lemon

–       Salt

–       Pepper

–       Pine nuts or toasted walnuts or toasted pecans or slivered almonds (or no nuts at all if you prefer.)

–       Some kind of nice cheese

Cut the stems off your zucchini and slice them lengthwise into thin sheets. Lay the sheets out and slice them again lengthwise. They should be like a bundle of very fine twigs. One small zucchini will equal about one portion. Puts the zucchini sticks on a plate. Take a few leaves of fresh basil and cut or tear them up. Add the basil to the zucchini and dress with a bit of olive oil and a few drops of fresh lemon. Toss with a little fresh pepper and salt to taste. Sprinkle the nuts on top and add cheese. If you have a hard parmesan style cheese I recommend grating it over the top. A firm cheese (like the manchego in the picture) can be shaved onto the salad with a paring knife.  You could also use a soft goat cheese or ricotta spooned on in little dollops. Makes a great fresh and light summer lunch. You could also wrap little bundles in ham or prosciutto for a nice appetizer. Enjoy fresh summer produce!
